Over time, if our glucose levels are consistently elevated due to diet, then insulin production remains constantly high too. This can cause our cells to become ‘numb’ to insulin, which is called insulin resistance. This means that we need more and more circulating insulin to get glucose into our cells. And this process directly counters weight loss efforts, and in fact leads to weight gain. Eventually, insulin resistance can lead to pre-diabetes and diabetes, some of the most common metabolic diseases in the world.
